Every autumn the fields at Pampore open for roughly two weeks, and the whole harvest happens by hand before mid-morning — heat costs the thread its perfume. It takes something close to a hundred and fifty flowers to fill a single gram, which is why the pour-over that carries it is capped at a handful of servings a day. We buy the season whole and let it decide how long the menu runs.
